The Sorting Room proudly welcomes Blas Restaurant from St Davids at Twr y Felin Hotel an exclusive three-day pop-up.

This collaboration celebrates our shared passion for exceptional Welsh hospitality and storytelling through food, bringing together two iconic names for a truly unique dining experience.

At the heart of this event is Blas’s talented team of chefs Dan Slipakiv and Gareth Evans, support by Justin Llewellyn from The Parkgate Hotel, who have curated a menu that reflects the very essence of Pembrokeshire. Expect dishes inspired by both land and sea, showcasing the finest local produce from the surrounding area. Every plate tells a story of provenance, creativity, and respect for the region’s natural bounty.

Guests will be immersed in the flavors and artistry that have made Blas a destination for food lovers across Wales, elevated by elegant presentations, thoughtful pairings, and a genuine sense of place. This is more than a meal; it’s a celebration of Welsh culinary heritage brought to life in the sophisticated setting of The Sorting Room.
